The healthy stir-fry!

The healthy stir-fry!

Weeknights usually call for simple, easy dinners. Who has the time or patience to be cooking for a long time after a day at work? Making easy, delicious and healthy meals is not that hard. One approach is the stir-fry. You may say: “but it’s always the same thing”. Think again. Once you know the basics of stir-frying, you can really prepare an endless number of delicious dinners that everyone will love.

If you look up the definition of stir-fry, you will find “a fast way to cook small pieces of food in a hot pan or wok. As the name indicates, the food is constantly stirred while you cook it. You can prepare different vegetables, meats, seafood and poultry using this method”.  There! Simple enough!  So, one of the great advantages of stir-frying is that it results in tender-crisp vegetables that retain more nutrients than if they were boiled. And since stir-frying requires only a small amount of oil, the fat content is low.

Why go to a butcher shop?

Why go to a butcher shop?

Have you ever stoped to think about the reason why so many people still prefer to go to a butcher shop? In this fast paced world we live in, we have a tendency to look for the easiest, more simplified way of shopping. Nothing wrong with that. However, in doing so, we should also analyze the following question: am I really saving money and getting the best quality product I could get?

Here’s the thing: when shopping for meat, going to your butcher shop can save you money and will ensure you eat well from cuts of meat you simply can’t find at your mainstream market, unless the butcher shop is also at the supermarket. This is the reason why we are also at Nofrills locations. Journalist Florence Fabricant wrote once in The New York Times that “buying some pork or most other meats is not as simple or as cheap as picking out an apple. Do not tweet your friends for advice; consult the butcher.” You miss out on a lot by strolling into the grocery store and picking up a styrofoam tray of meat. Why is that? Well, your serving sizes are really based on how the meat will be trimmed, and how you plan to cook the meat also determines the cut. In other words, you need to talk to the butcher and present your cooking ideas. Let’s say that what you are looking for is not available. No worries. The butcher will be able to offer you an alternative.

So, if you haven’t done so yet, start planning your meals and bring your recipes or ideas to your butcher shop. You will be surprised at how much information you can get and how happy you will be with the meat you will be serving on your meals – not to mention your family’s and friends’ satisfaction. Let’s face it: butchers deal with meat all day long and LOVE talking about it.

Summer cooking… let’s share some ideas!

Summer cooking… let’s share some ideas!

Summer means cookouts! I think we can all agree that it is the perfect season to get the family and friends together and share your favourite BBQ recipes. It is fun and an excellent way of spending quality time with those closer to us.

When planning your bbq recipes, you want to make sure of a few things. First, make sure you have enough food. There’s nothing worse than having more people than you thought to come over and finding out that you don’t have enough food to feed them all. Secondly, have a variety of options. Not everyone likes burgers or hotdogs. Therefore, you’ll want to have a different selection of main entrees like steaks, chicken, hamburgers, sausages and hotdogs. That ensures that there’s something for everyone. You’ll also want to make sure you have enough side dishes and snacks to pass along while people are waiting for the food to cook.

What is also important to remember is the healthy aspect of the bbq. Many people forget about chicken when hosting their bbq’s. Chicken is a staple for a family gathering and it is quite healthy. That’s because it’s so versatile and it’s a popular choice among children. All you have to do is season your meat, grill it, and slather it with some bbq sauce. It can be served by itself or with a bun.

The most important aspect? Have fun and enjoy these summer days. And don’t forget to share some of those recipes with us. We would love to publish them. Enjoy!

Cold cut platter!

Cold cut platter!

A cold cut platter is a simple, crowd-pleasing spread to have at any party. The key to putting together an amazing one is balance. A variety of cold cuts and types of pickles and palate cleansers should all complement one another.

Now that summer is here, having guests over and spending a nice evening in our backyards seems to be what most of us long for all year long. How can we best entertain them? By definitely having a some cold cut platters.

Choose two varieties each of pork, beef and poultry, or four varieties each of beef and pork, and have an equal amount of each. For example, you could use pastrami and corned beef, prosciutto and capicola, and turkey and chicken. Buy four or five ounces of cold cuts for each guest—if you’re buying beef, pork and poultry to feed 10 guests, you need 40 to 50 ounces total, or six to eight ounces of each type of cold cut.

Fatty foods need an acidic accompaniment to round out their richness. Cold cut platters should have at least one or two pickled ingredients and don’t forget to select at least one type of cheese for each type of meat.

Enjoy!

Grilling… the healthy way

Grilling… the healthy way

There’s something about the act of grilling that just makes food look and taste fantastic. There are always plenty of great options for savouring. The best part of all is, it isn’t just fun to grill, it can actually be healthy for you as well, if you do it right. By choosing foods that are low in fat, high in nutrients and full of flavor you can get great meals that are also healthy. Use marinades not only to add extra flavor but also to reduce the formation of cancer-causing substances on foods. A marinade containing olive oil and/or citrus juices can reduce the formation of these chemicals by as much as 99% and marinades tenderize meats and make a much better meal.

The most important thing, when it comes to grilling in a healthy way, is to follow some steps. First, keep your grill clean. A clean grill not only cooks better is is safer in every way. Trim all excess fats from foods. These fats are the causes of so many health problems. Use marinades based on olive oils and/or citrus juices. This is the number one way to stay healthy. Do not overcook foods. Not only does it take away the flavour, it also creates substances that may cause cancer Use herbs like basil, mint, rosemary, thyme, oregano, and sage to add flavour.

Making a healthier burger!

Making a healthier burger!

Is there anything better than a burger during grilling season? However, we need to also find a way to enjoy this delicious summer meal without so many calories. Can we make a healthier burger? We definitely can. A typical burger starts with high-fat ground beef and is then dressed with toppings that push the fat meter even higher.  So just how do you go about making a healthier burger that not only tastes good but is good for you?

The right ingredients, proper cooking, and flavorful toppings are the keys to a better burger, says Chef Richard Chamberlain, co-author of The Healthy Beef Cookbook. To make a healthy burger, you can start with lean beef or poultry. For a lean beef burger, grind any of the 29 cuts that qualify as lean:  eye round, sirloin tip, top round, bottom round, top sirloin, brisket, round tip, round steak, tri tip, strip steak, flank, tenderloin, T-bone, ranch steak, and top loin.

Outdoor grilling is one of the best methods for searing juicy flavor into a burger. Leaner meats require a lower cooking temperature and benefit from added ingredients to increase moisture. Season your burgers with coarse salt, fresh-ground pepper, or seasoning blends or rubs.

For maximum juiciness, cook burgers right before you plan to eat them. Lastly, you can add moisture, flavour, and nutrition with the following ingredients, either inside or on top of the burger: onions, tomatoes, peppers, lettuce, mushrooms, salsas, fruit or vegetable relishes and guacamole.

Enjoy!
